Description
This is based on a popular broccoli salad from a well known kosher cookbook. I’ve been missing this salad since I became vegan, so I decided to make a vegan version with my own twist.
Ingredients

- 3 cups broccoli (small florets), steamed
- 1/2 cup vegan mayonnaise such as “Just Mayo”
- 1 TB light balsamic vinegar
- 1/2 cup cashews, either raw or roasted but unsalted
- 1/4 cup dried tart cherries
Instructions
- Steam broccoli and let cool.
- In a small bowl, mix vegan mayonnaise with the balsamic vinegar.
- Pour over the cooled broccoli.
- Add cashews and cherries.
- Mix well.
- Enjoy now or refrigerate for later.
