Shavuot is a Jewish holiday celebrating the receiving of the Torah at Mt. Sinai. It’s a tradition to stay up all night learning Torah for the holiday. It’s also a tradition to stuff yourself full of cheesecake, lasagna and other dairy delights. If you’re looking for healthier options, keep reading!
After a few tough years, Shavuot is finally not a three day yuntov. However, it does come off of a big hosting holiday – Memorial Day – and end 1 day before Shabbat. So we’re not getting off easy here.
Here are a couple of ideas that you can also use for Memorial Day. How’s that for helpful?
BBQ Black Bean “Burgers”
Cook matchstick carrots in barbecue sauce until they’re soft and hot.
Cook a black bean burger, such as the ones from SOL Foods.
Toast a bun, preferably a pretzel bun from Trader Joe’s.
Top the bottom of the bun with the burger and carrots. Top with a big lettuce leaf for a refreshing crunch, hold the toppings on and prevent you from eating both sides of the big bun.
This is based on a popular broccoli salad from a well known kosher cookbook. I’ve been missing this salad since I became vegan, so I decided to make a vegan version with my own twist.
- 3 cups broccoli (small florets), steamed
- 1/2 cup vegan mayonnaise such as “Just Mayo”
- 1 TB light balsamic vinegar
- 1/2 cup cashews, either raw or roasted but unsalted
- 1/4 cup dried tart cherries
- Steam broccoli and let cool.
- In a small bowl, mix vegan mayonnaise with the balsamic vinegar.
- Pour over the cooled broccoli.
- Add cashews and cherries.
- Mix well.
- Enjoy now or refrigerate for later.

Banana Split sans ice cream
Simply freeze sliced bananas for a couple of hours, mash them up a little, and add your sundae toppings!
You won’t even miss the ice cream.
