If you don’t know who Nava Atlas is, you must not be vegan! She is a prolific vegan, healthful, cookbook author. She’s also Jewish and has a fantastic holiday cookbook (which includes non-Jewish and American holidays too). I was thrilled to open up my Jewish Food Experience email the other day and find her recipe for Cinnamon-Spiced Chickpea and Lentil Stew.

This recipe reminds me of another one pot wonder (my own recipe) that I shared with you last Purim: Pumpkin Pantry Chili.

It doesn’t really get any easier (well, except for my “Help I have to make dinner” Shepherd’s Pie.) That’s good because I literally forgot that I have to make dinner for the end of the fast (tomorrow/Wednesday!).
These are all great family recipes, whether you celebrate Purim or not. Who doesn’t want a warm, one-pot meal at the end of the day? …Especially when your kids are tugging on your sleeve to get to shul for Megillah and the all-important costume contest!
Happy Purim!
